Merry Medley
Merry Medley 10/24 is a complex medley of fruit grown on our farm. The base spirit was made from our 49th and 50th stripping runs. We extracted the alcohol from wines made of Morello Cherries, Prune Plums and Elderberries. A reflux run distilled the base to 92.4% abv. As we like it - not entirely neutral, preserving some of the flavours of the wines.
Tayberries (58%), Raspberries (25%) and Silvanberries (17%) were soaked in the base spirit before squeezing the juice out of the fruit pulp, and adding the sugar syrup sweetener. This medley of deliciousness is a winner!
The final product is 26.0% abv. Perfect for sipping on its own or adding to your merry cocktails.

Ravishing Red
Ravishing Red 08/24 is our 2024 raspberry liqueur. This was our biggest batch yet - we tested the volumetric limits of our equipment! The base spirit is a new one - distilled wines made of apple and plum - all grown and made at the farm.
A generous amount of our 2024 soil grown chemical free raspberries were added to the base spirit and aged for two weeks until the strong raspberry flavour emerged and the beautiful natural colour infused the spirit. Sugar syrup was added to make the final product just sweet enough - not sickly sweet.
If you love our raspberries, you’ll really love this Raspberry Liqueur. At 25.4% you can sip it or use as a mixer.

Barrington Blue
Barrington Blue 06/24 is an all natural blueberry liqueur, made using our house made kirsch base spirit and blueberries picked on our farm in January 2024.
It’s just sweet enough, flavourful and absolutely delicious. The pinky-purple colour is all natural, made by the juices and skins of the blueberries macerating.
26.0% abv.

Silvan Delight
Sweet, soft, smooth, and a bright crimson colour, Silvan Delight is full of Silvanberries from the 2024 picking season. Our Silvanberries are grown outside, in soil, mulched with natural materials and fertigated with compost teas, making them absolutely delicious - plump, juicy and sweet.
Our kirsch base spirit provides a good foundation for the generous fruity infusion.

Limoncello
Our batch 02/24 is made from Summer ripened and harvested lemons, while batch 05/24 is made from Winter ripened and harvested lemons. This bold and unfiltered limoncello was created with our sumptuous kirsch base spirit. The lemon tree grows 5 metres from the still. For each batch, just under 200 lemons lemons were hand-peeled and the peels soaked in the base spirit for 6-7 weeks before we added sugar syrup to complete the liqueur.
The result is a sensory experience and one of a kind.
There were 66 bottles in batch 02/24 and 48 bottles in batch 05/24.

Gooseberry Liqueur
Gooseberries were the hero fruit of our 23/24 season, so it was only fitting that we used them in our first distillery run of 2024.
The subtle gooseberry flavour permeated through the skins when we infused the fruit in our Kirsch base spirit - made using morello cherries grown and fermented on our farm.
The base cherry spirit provides a background to the gooseberry, with just enough sweetness. Rich, bold and concentrated, our Gooseberry Liqueur is lovely on its own or would make an amazing cocktail ingredient. This won't be like anything else you've ever tried.
There are only 68 bottles available of Gooseberry Liqueur batch 01/24.

Raspberry Kirsch
Raspberry Kirsch batch 05/23 started with a Kirsch base spirit - from Morello cherry ferment, grown and made at Plump Berries farm.
A generous amount of our 2022/23 soil grown chemical free raspberries were placed in a basket in the still in the third distillation run - vapour infusing the raspberry flavour into the Kirsch.
The result is a 45.7% abv spirit with a rather snorty bite (for the kirsch enthusiast) and a raspberry flavour. Drink as is or add soda water or your favourite tonic.

Raspberry Kirschwasser
Raspberry Kirschwasser batch 08/23 started with a Kirsch spirit - from Morello cherry ferment, grown and made at Plump Berries farm.
A generous amount of our 2022/23 soil grown chemical free raspberries were soaked in the kirsch spirit.
The result is a 43.6% abv spirit with a lovely bold raspberry flavour with no added sugar, and is unfiltered.
Drink as is, or add sweetener to your liking or mix with soda water, tonic, and add lemon.

Wood Infusions
Herbfire
THIS IS HERBFIRE!
Unique, single origin, and a definite once off.
Our farm came with cellared sweet dessert wines, and we dug out some of the more unusual ones - Lemon + Mint, Mint, Oregano, Parsley, and Hawthorn. We stripped the wines down in the pot still, then finessed the spirit in the spirit still (down to 77% abv), before infusing with oak. It’s not neutral - the flavours of the herbs provide an amazing foundation for this fiery, strong spirit.
The herb wines are gone, and we don’t plan to make any more, so this will truly never be repeated.
Only 43 bottles went to market.

Eldercherry Brandy
The eu de vie for this batch was created by distilling Cherry and Elderberry wines. We infused with oak, manipulating temperature fluctuations to encourage the chemical exchanges between the spirit and the wood.
The elderberry flavour shines through to create a complex and interesting taste sensation.

Cherry Brandy
Our batch 03/23 started with a spirit base made from morello cherry ferment, grown and made at Plump Berries farm.
The kirsch was infused with french oak. This is a young lightly wooded drink, different to sweetened brandies made from grapes or sweetened with cherry juice.
The result is a 45.1% abv light smooth brandy with a gentle and pleasant tickle.

Cherry + Apple Brandy
Our single origin batch 06/23 is made from morello cherry and apples grown chemical free and naturally on our farm.
It was created from a cherry and apple ferment - the same ferment used in our Cherry + Apple 2023 fruit wine. A barrel was reserved to hand craft this distilled product.
This brandy was infused with french oak. More heavily wooded than our Cherry brandy, this too is an unsweetened brandy.
The result is a 43.9% abv heavy and smooth brandy with a happy tickle.
